Roasted Cauliflower with
Asiago and Orange

3 T olive oil
1/4 tsp salt
1/2 tsp grated orange peel
1/4 tsp pepper
2 lb cauliflower florets
1 cup shredded Asiago cheese

Heat oven to 450 F
In large bowl, mix oil, salt, orange peel and pepper
Toss in cauliflower until evenly coated
Place mixure in ungreased 15x10x1 inch pan
Bake 20-25 minutes
Sprinkle with cheese
Bake 1-2 minutes longer or until cheese is melted
10 servings (1/2 cup each)
Prep time 10 minutes
Start to finish:  40 minutes
Calories: 120 per serving
