Spicy Grilled Quesadillas
Ingredients and Directions
8-6-8 inch flour tortillas
8 oz. shredded cheddar cheese (about 2 cups)
1 jar (16 oz) Chunky Salsa
1 cup diced cooked chicken
4 medium green onions, chopped (1/2 cup)
vegetable oil
1 container sour cream
Top each of 4 tortillas with 1/2 cup of the cheddar cheese, 1/4 cup salsa, 1/4 cup
chicken, and 2 T. green onions.
Brush edges of the tortillas with water.
Top with the remaining tortillas and press edges to seal.
Lightly oil a grill- I use a George Forman type of sandwich grill
Grill until cheese melts and the tortillas lightly brown.
Let stand for 2 minutes.
Cut into 4-6 wedges
Serve with remaining salsa, sour cream and guacamole.
