Pineapple Upside Down Cake

Melt 4 Tbs. butter in a medium cast-iron pan
Add 3/4 cup brown sugar
Arrange pineapple slices on the above mixture
Fill in holes with maraschino cherries

1 1/4 cups sifted cake flour
1 1/4 tsp. baking powder
1/4 tsp salt
3/4 cup sugar

In a separate bowl combine:
4 TB soft butter
1 beaten egg
1/2 cup milk
1 tsp. vanilla

Mix flour mixture to the butter mixture and pour over
the pineapple.
Bake at 350 for 40-45 minutes
Let stand 5 minutes.
Invert on a plate.
Can double this for a larger pan.
