Peanut Brittle

3 cups sugar
1 cup light corn syrup
1/2 cup water
3 cup salted peanuts
2 tsp baking soda

In large saucepan stir together sugar, corn syrup and water
Cook over medium heat, stirring constantly, until sugar dissolves and
mixture comes to a boil
Continue cooking without stirring til temperature reaches 280 on
candy thermometer
Stir in peanuts gradually so mixture continues to boil
Cook, stirring often, and watch closely until temperature reaches 300
Remove from heat
Add baking soda, stir in gently but quickly
At once pour candy into 2 large buttered cookie sheets
Break into pieces,
Makes about 2 1/2 pounds.
