Guess Again Carrots

2 lbs carrots
2 T butter
1 small onion
6-8 oz. shredded sharp cheddar cheese
1 1/2 tsp. salt
1/8 tsp. pepper
buttered bread crumbs

Pare, slice and boil carrots until tender.
Drain and mash carrots using potato masher.
Add butter, onion, cheese, salt, and pepper to carrots and mix well.
Place carrot mixture in a buttered 1-quart casserole dish.
Sprinkle with bettered bread crumbs before baking.
Bake in a preheated oven at 350 degrees for 40 minutes or until
bubbling.
Garnish with parsley.
