French Dressing or Sauce Vinaigrette

Combine in a small bowl:
1/4 tsp salt
1/4 tsp pepper
1 T olive oil
1 T vinegar or lemon juice (or lime juice)-
raspberry vinegar is very tasty
(1/4 tsp dry mustard)
Beat these ingredients well with a wire whisk or a fork until they are smooth
2 T olive oil (Marian uses 1 T)
Beat well again.
1 T vinegar or lemon juice (or lime)
3 T olive oil (Marian uses 1 1/2 T)
Peel and add:
1 clove garlic- don't chop, drop in the sauce as a whole piece and remove
when serving
Place the dressing in a jar, cover it well.
Put in a cold place ready for use.
Shake well before using.

Makes about 1/2 cup
