I like this recipe as it uses boneless chicken breasts.
4 chicken breasts, boneless and skinless and cut into small strips, 1 inch
1 large can (16 oz) peeled tomatoes
1 small can (8 oz) tomato sauce (flavored is very good with it)
1 small can (8 oz) diced stewed tomatoes
1 large green pepper, chopped
1/2 cup chopped celery
1 medium onion, chopped
1 cup sliced mushrooms- baby bellas are great!
2 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley or 1 Tb. chopped fresh parsley
1/4 tsp salt
1/4 tsp ground black pepper
1 small jar capers
Spray a large skillet with nonstick cooking spay.
Cook the chicken, stirring, for 3-5 minutes, or until no longer pink.
Reduce heat to medium
Add rest of ingredients, to include the juice from the can of tomatoes.
Bring to boil and then reduce heat and simmer, covered for at least 10 minutes.
Just before serving add jar of capers with juice
Serve over rice or pasta
