Chocolate Ice Cream
5 squares unsweetened chocolate, melted
3 cups milk
2 cups milk
2 1/2 cups sugar
5 Tbsp. flour
3/4 tsp salt
4 eggs, slightly beaten
5 cups cream (3 cups half & half & 2 cups whole cream
2 tsp vanilla

Scald milk over low heat
Stir in melted chocolate
Combine sugar, flour & salt in a bowl
 Add eggs and mix well
Pour hot milk over egg mixture very slow
 Sirring constantly
Cook over low heat until mixture coats a spoon
Chill in refrigerator until very cold
Stir in cream & vanilla
Betty deserves the credit for the ice
cream as she would mix up the batter.  
Merton was the one who placed the
mixture in the icecream maker and
stirred it until it froze!
