Chicken Marengo
4 pieces of chicken
1/4 cup oil or melted Crisco
1 clove garlic, minced
1 onion chopped
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/2 cup white wine, chicken broth, or water
2 tomatoes, peeled and quartered
1 four ounce can mushroom pieces

To peel a tomato, you stick it on a fork, dunk it in boiling water,
count to 10, take it out, and the skin will come right off (by peeling
it with a knife)

Brown the chicken in the hot oil.
Add garlic, onion, seasonings and wine.
Cover, simmer slowly, until chicken is done (about 1/2 hour)
Add tomatoes and mushrooms, at the end, just long enough to let
them get hot.
